Anthocyanin Analysis of Food Supplements

Using mass spectrometry QIB Extra’s experts carried out anthocyanin analysis of vegetable extracts for a consortium of manufacturers.

Our customer required anthocyanins analysis on a large number of vegetable extracts intended for use as food supplements. Anthocyanins are a class of antioxidants which are common in red and purple fruits and vegetables.  QIB Extra has extensive knowledge of this class of compounds and the determination of levels of these compounds in various fruits and vegetables.

QIB Extra received extracts in freeze-dried form and as raw vegetables which QIB Extra freeze-dried for analysis.  These samples were then put through a simple acidic solvent extraction to remove the anthocyanins. The extract was then analysed by ultra-performance liquid chromatography with diode array and mass spectrometric detection. Monitoring the chromatographic eluent at 520 nm elicited a global response for the purple coloured compounds and the mass spectrometer was used to identify which type of anthocyanin species was present.

The result was a report detailing the anthocyanin content of each vegetable sample. The consortium then used this data as part of an EU dossier.
